Cosa farete

We'll get stuck straight into spices in the kitchen of a local farmhouse ten-minutes drive from the centre of Margaret River. For three-hours I will led you through an intimate tour and taste of Indian spice via storytelling, raw spice tastings, hand-on participation and dinner: you'll get the benefit of insider knowledge handed down to me in the New Delhi kitchen of my Kashmiri grandmother. I will teach you the beginnings of free-form spice cooking. Spice is sexy. It's raw. My stories and my techniques will light you up and feed you. The evening is broken into two parts: a two hour class involving some hands-on participation and plenty of tastings, and an hour of conversation and questions around a four-dish traditional Kashmiri meal with freshly made chapattis that we eat together - with your own great bottle of Margaret River red. Winter classes are inside by the open fire. In summer? We finish up with our meal outside on the deck among the gums. The evening includes the class, all ingredients, a meal and you get the added gift of all the recipes we cook on the night to take home and try for yourself.

I'm a Kashmiri-Australian spice mistress and author now living, writing and running spice classes in Margaret River after twenty years of working as a food critic and food writer in Paris, Los Angeles, Melbourne, Edinburgh, Sydney and Barcelona. My first book, Spirits in a Spice Jar, (Westland Books) is on bookshelves in India. Back in Australia my spice mistress columns run fortnightly with SBS Food, and my Saturday mornings are spent talking spice on ABC radio South West. The cooking classes will be conducted in a rustic farmhouse (replete with commercial kitchen) that makes up part of a permaculture farm, ten minutes drive from the centre of Margaret River. Think tall gums, lots of timber and glass, a woodfire for the winter and a beautiful deck under the building's eaves where we eat through the summer. Definitely an abundance of bird call, and the opportunity to get close to the odd kangaroo.
