Cosa farete

Total of 2 hours of experience. Experience "shojin ryori," a Japanese vegetarian meal in its place of origin: Kamakura. You will participate in cooking the Shojin Osechi-ryōri. It is traditional Japanese New Year foods. They come in an assortment of colorful dishes packed together in special boxes called jubako, which resemble bento boxes. Every dish of these traditional foods has special meaning in welcoming the New Year. We will feature some of the dishes from Osechi Ryori and Ozoni -Japanese new year mochi- soup. The class will be a combination of a demonstration and lecture, occasionally asks to participate in the cooking process. We will talk about the meanings of each dish as well. With the demonstration and the recipe, you are ready to cook Osechi and Ozoni for a new year!  Menu: Pickled White Radish and Carrot  (Kohaku Namasu) Burdock root seasoned with sesame (Tataki Gobo) Mashed sweet potatoes with sweetened beans (Mame Kinton) Simmered chicken* with vegetables (Chikuzenni) *we will use substitution  Kyoto-Style Ozoni - a bowl of soup made with vegetables and sticky rice cake.  *Menu may change without notice. I am a director of the Onjakukai kaiseki group. I teach seasonal Kaiseki cuisine, regional Japanese cuisine, Shojin Ryori Buddhist cuisine, and Sekku festival cuisine in addition to promoting Cha-kaiseki cuisine and developing regional produce and menus. Also, I am responsible for many sake and cuisine pairings and teaching sake workshops at culture schools and other venues. I teach mainly around Kanto region, but travels around the world to bring more people into contact with amazing Japanese cuisine. I am looking forward to meeting you!
