In my kitchen you will have a unique chance to learn how to craft artisan sourdough bread. You'll get hands-on training in how to utilize ancient techniques to make beautiful, nutrient-packed, and delicious bread at home.

I'll guide you through the steps on how to build a successful ferment, share my own secret tips, and have you taste the fruits of our labor. Together we will craft traditional sourdough loaves using my own method, one which I have meticulously perfected over years of troubleshooting.

We will start with learning about the yeast itself, how it functions, and how to upkeep a healthy culture for making nutritious bread with.

Next we’ll get into the science, delving deep into each component of the bread and how such humble ingredients can come together into a beautiful symphony of flavor and texture. You’ll learn more about wheat, yeast, and water than you ever thought possible.

After getting a handle on properly formulating a strong dough, we will get down and dirty and learn how to knead. I will demonstrate a few time-tested methods for working the dough and show you how to build structure within the bread.

Lastly, we will bake our supple, pillowy loaves utilizing a few different techniques which you can continue to use at home. I’ll instruct you on how to accurately monitor the bread and produce a dazzling result.

Then, we feast on our creations!

Bom dia, my name is Victor. I am a Portuguese-Italian home cook living and working in Brooklyn.

Many years ago during a rough period of my life I discovered the magic and mystique of a new culinary terrain; sourdough bread. Though it was a difficult process to learn, I eventually grew to love it. I worked closely with bakers, chefs, and brewers from across the country and spent the better part of a decade mastering the science behind wild-yeast fermenting. It is my pleasure to share the ways I have adapted this old-world technique to be used in the modern kitchen.

By exploring the time-honored world of sourdough bread, I have developed a deep understanding of the process. Now, my goal as a baker is to guide others through the same journey. It is with great anticipation that I get to share this passion with the world.
