You will learn the entire process from cooking to eating with us. Here is a sketch of the time you will spend with us. First 10 minutes: Enter residential home in Singapore - introductions with my mother, her background in cooking and her ethnicity that shapes her cooking. Guests can introduce themselves and share their level of comfort with spiciness and cooking. Next 10 mins: Introduction to dishes we will cook. My mum will cook 2 -3 different dishes. (This will vary per session depending on the taste buds and preferences of our guests) Some of our highlights include: 1. Pal Mee Siam (coconut based vermicelli noodles with home - made sambal belachan) 2. Tahu Goreng (Stir fry tempeh and tofu) 3. Payasam (vermicelli based Indian dessert pudding) 4. Poori (Fried Indian bread) with channa dhal (chickpeas curry) 5. Ikan Billis Sambal (anchovy sambal) Next 15 mins: Preparation and showcase of ingredients, instructions for who does what. Next hour - hour and a half: Cooking experience - my mother will show the steps and guests will follow. We will make a portion of each dish that will be big enough for 5 people to eat. My mother will show the technique of each dish from frying the basics to the very end of completing the dish. Last 40 mins: Setting up of table and showing of using hands to eat.

My mother, Zaithoon (Zi) is an expert in Indian Muslim food and has cooked for festivals like eid, weddings, family functions, birthdays for the past 20 years of her life. I've been learning to cook Indian Muslim food from my mother for the past 3 years, to evolve from cooking salads to the ones my mum makes. In Singapore, there are plenty of "mamak" shops that sell Indian Muslim food. However, this is nothing like what my mum makes at home that can be found in stores. For example, she makes "mee-siam briyani" and "pal mee siam" these are variations of traditional Indian and Malay dishes found in Singapore. Our unique heritage and presence in Singapore for three generations have shaped my mum's cooking and tweaked it from the way her ancestors cooked. You will learn about food and history while getting your hands in the pot.

My mum's house is a HDB (Housing Development Board) flat / residential highrise flat in Toh Yi Drive. This is in the heart of bukit timah and one of the 5 HDBS left in this area. It is in a great location accessible by bus and train from anywhere in Singapore. It will also allow guests to see how people live in HDBS in Singapore and how local families live.
